The Origins of a New Mexican Delicacy

New Mexico is known for its unique culture and delicious cuisines and pastries. However, one cookie stands out as the epitome of New Mexican desserts. That cookie is known as the Biscochito/Bizcochito. Originally introduced to New Mexico in the 16th century by Spanish settlers as a type of biscuit, the infamous cookie went through a couple of variations before it became the distinct New Mexican delicacy that we know and love today.

The name “Biscochito” comes from the Spanish diminutive form of “bizcocho”. It is said that this cookie was created by both Spanish settlers and Native American Pueblos in New Mexico. Many variations of the biscochito have been made in all parts of New Mexico. Some of the most well known biscochito recipes come from Northern and Southern New Mexico. However, there are also a few recipe variations along route 66. Although there are many variations to the cookie, traditionally a biscochito has a few key ingredients: lard, cinnamon, sugar, and anise. The cookie is also typically coated with a cinnamon-sugar mixture.

The Biscochito has been a popular cookie in New Mexico for centuries. It is so popular, in fact, that in 1989 the Biscochito became the state cookie. This also made New Mexico the first state in the United States to have an official state cookie. Biscochitos are usually enjoyed during special occasions like holidays or personal celebrations. However, one of the most popular times for the biscochito is the Holiday season in November and December. A New Mexican Christmas is never complete without some delicious Biscochitos.

Regardless of the time of year, Biscochitos are always a delicious treat for anyone who has a sweet tooth. And if someone is ever looking for a true New Mexican experience, they must experience this amazing New Mexican delicacy.
